Ingredients:

  • 1 large head of cauliflower, cut into florets
  • 3 tbsp Relish & Smooth early harvest extra virgin olive oil
  • ¼ cup pomegranate molasses
  • 1 tbsp honey
  • 1 tsp ground cumin
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Pomegranate seeds (for garnish)

Instructions:

  1. Preheat the oven to 200°C (400°F).
  2. Toss the cauliflower with olive oil, cumin, salt, and pepper. Spread on a baking sheet in a single layer.
  3. Roast for 25–30 minutes, or until golden and crispy at the edges.
  4. In a small bowl, whisk together the pomegranate molasses and honey to make the glaze.
  5. Drizzle the roasted cauliflower with the glaze and gently toss to coat.
  6. Garnish with fresh parsley and pomegranate seeds before serving.
