What acidity really tells you
Inside a healthy olive still on the tree, the fats are neatly held together. At that point, acidity is almost zero. Nothing has gone wrong yet.
If an olive falls, gets bruised, or sits too long in warm crates before pressing, the fruit starts to break down. Natural enzymes then split the fats and release free fatty acids. The longer the wait between picking and pressing, the higher the acidity goes.
The simple rule:
Low acidity is not something added to the oil. It is proof that the olives were handled carefully and pressed quickly.
High acidity usually means older or damaged fruit.
Ultra-low acidity (0.2% or less) means clean, undamaged olives pressed within hours.

Stays fresh longer
Free fatty acids break down more easily when exposed to air. When acidity stays below 0.2%, the oil keeps its structure better, so it is slower to turn rancid and holds its fresh fruit aroma for longer.
Better in the pan
Free fatty acids start to break down at lower heat. Higher-acidity oils often begin to smoke around 350°F (175°C). Ultra-low acidity extra virgin oil can usually handle higher heat, around 410°F (210°C), so it works well for gentle sautéing and roasting.

In olive oil, acidity does not refer to sourness or pH like citrus juice. It is an exact chemical measure of Free Fatty Acids (FFA), expressed as a percentage of oleic acid. Acidity measures the extent of cellular breakdown: low acidity indicates pristine, undamaged olives pressed rapidly after harvest, while high acidity indicates damaged or fermented fruit.
