Olive polyphenols are a diverse family of naturally occurring bioactive compounds produced within the olive fruit. They form part of the olive treeβs natural defense system against environmental stress.
When olives are crushed and pressed, a portion of these phenolic compounds passes from the fruit into the oil. Their concentration and composition are influenced by olive variety, ripeness, growing conditions and production.

We harvest our early-season green olives in August, when they have high polyphenol potential and an intense green character. Within 2 hours of harvest, they are cold pressed at controlled low temperatures to help preserve their fresh aromas and naturally occurring polyphenols.

For a morning olive oil shot, choose a fresh, early-harvest extra virgin olive oil with a published polyphenol test. As a practical guide, 250 mg/kg or more is a good starting point, while 500 mg/kg or more indicates a particularly high-polyphenol oil.
Juicy Olive Fruity & Full-Bodied contains 840 mg/kg of polyphenols and has exceptionally low free fatty acids of β€0.2%. Its bitterness, pepperiness and fresh aromas are most noticeable when used for finishing, salads, dips and drizzling, while it can also be used for sautΓ©ing, roasting and baking. Heat may reduce some delicate aromas and phenolic compounds.
