Ordinary olive oil is usually made from ripe olives that yield more oil but contain far fewer polyphenols. We harvest young green olives early in the season. It takes up to 4 times more olives to produce one bottle of Juicy Olive, resulting in significantly higher polyphenol levels (up to 8× more than typical supermarket oils).
